Will teach you a lot

This book is great! It doesn't have the insane range of traditional recipes of so many general books, but it will teach you very good ways to cook almost any kind of food. More importantly, it'll teach you how to get good results every time, and it'll tell you why recipes work or don't work so you'll be able to modify them to suit.
The first half of the book is general purpose and the second half is all about desserts. It's a bit of an odd balance, but it works. The dessert section is extremely effective. Baking is hard to get right, but Kimball explained everything so well that my first attempt at sugar cookies were a success.
The only negatives about this is that it's a compilation of two books, and therefore the tables of content and indexes are split. Also, the chapter divisions in the Cook's Bible are a bit strange, but since things are indexed so well it's not a barrier to use.
It's a tragedy this is out of print. I got my copy on the discount table and didn't realize what a lucky find I'd made at first, but it was one of the few books that were a must to find when I got divorced, because neither I nor my wife would part with it.

What an Amazing Find!

Remember Mel Gibson's character in "Conspiracy Theory"? The guy who's really quirky who has been programmed to habitually scour bookstores for copies of "To Kill A Mockingbird"? That's me with this book, but without Julia Roberts or the great hair.
I, like others, picked this book up at a local big box store after my wife and I got engaged - needed a basic, do-everything cookbook and was rebelling against Betty Crocker, just a little. I didn't use it much at first, and then one night, my wife and I had a disagreement, one of our first (and few). We had both eaten broccoli growing up - her side boils it until it doesn't fight back anymore, my side eats it raw on salad or steams it for random lengths of time based on the phase of the moon.
I thought it was time for a reference text, so I pulled out Kimball. He succinctly informed us that the correct way to prepare broccoli is to place it in a boiling steamer for exactly 6 minutes - no more, no less.
We tried it, and we've been happily steaming in 6 minute increments for 4 years and counting.
My sister moved off to Korea with her military husband, and they are both talented cooks. I wanted them to have a copy of Kimball when they went, and it took me 6 months to find a copy. I ended up buying a secondhand copy from Amazon, and gave them my dustjacket - they love it.
I now blindly purchase every copy I find (I've bought 4 to date), as this is the ultimate shower/wedding/birthday gift for a cook of any level. My mom and wife are both Home Economics teachers, they love it as much as my coworkers that can barely boil water.
This is truly the best do-it-all cookbook you can buy. Yes, the layout is a bit odd - they combined two separate, wonderful cookbooks to make this one - so the front is the Cook's Bible and the back is the Dessert Bible, and they both have a table of contents and an index. Stick a post-it note in the middle where it changes over and you are ready for anything.
You've just gotta find your copy before I do...

Why is this out of print?!?!

This is truly one of the best books I own. I get rave reviews from the cookie recipes, the pie crusts, the breads (I love to bake), and the best part is, he explains WHY certain things are added and used. He's already tweaked the recipes we've used for years, so they need little tweaking for ultimate perfection -- a must have if you can find it.
